Courgette and Feta Fritter
Courgette and Feta Fritters
Serves 4
Preparation: 20 minutes
This recipe was inspired by Jamie Oliver and we made these last Summer and
they were just divine served with hot corn on the cob and a simple tomato
with fresh herbs and french dressing.
Since, we have served these with a delicious stuffed aubergine recipe!
Ingredients

3 courgettes, grated

1 bunch of fresh mint, finely chopped

2 free range eggs

35 g plain flour (or use either Chickpea, Buckwheat, Almond or Chestnut flour instead)

20 g Parmesan cheese
-
1 pinch of dried oregano
-
100 g feta cheese

Olive oil
Method

Coarsely grate the courgettes,

Pick and finely slice the mint leaves.

Beat the egg, then mix with the courgette, flour, Parmesan, mint, oregano and a good pinch of sea salt and black pepper. If the mixture seems too wet, you can always add a little extra flour.

Scrunch it all up really well with your hands, then crumble in the feta and mix again.

Heat a good drizzle of oil in a frying pan and fry tablespoons of the mixture for a couple of minutes each side until golden – these fritters make a lovely lunch with a leafy salad. Try serving with Creamy Minted Avocado Dip

Another idea is to serve these with Aubergines Layered with Crunchy Walnut Stuffing.
