Juicy Lucy Pudding
Serves 4
Preparation time: 10 mins
Cooking time approx. 20 mins
Hot fruit pudding full of vibrant flavours with a delicious crispy topping.
Serve with double cream - a great end to a meal!
Ingredients:

350g pack frozen fruits of the forest, defrosted

3 tbsp light muscovado sugar

6 medium-sized ripe pears, peeled, quartered and cored

50g/20z fresh white breadcrumbs

25g/1oz butter, melted
Method
1. Preheat the oven to 190c/Fan 170c/Gas Mark 5.
2. If the pears are not ripe, then these need to be poached in water and sugar until soft before being added to the recipe.
3. Mix the fruits of the forest in a large bowl with the sugar and jam, then add the pears and toss to mix.
4. Tip into a deep baking dish, cover with foil and roast in the oven for 20 minutes.
5. Pierce a pear or two to see if they are really tender. If not, return them to the oven for another five minutes or until they feel soft.
6. Mix the breadcrumbs with the butter and scatter over the fruit then bake uncovered for 10-15 minutes or until golden and crispy.
7. Serve hot straight from the dish with double cream.
