King Prawn and Crayfish Salad

This is marvellously quick and easy starter for a dinner or luncheon party and all the ingredients can be bought pre-packaged at your local supermarket - I use Waitrose and this is delicious and healthy!
A wonderfully extravagant and elegant presentation to impress your guests!
Crayfish can be an optional addition and there are two excellent
fish roes - Danish and Salmon Caviars.
Ingredients

1 pack of rocket or mixed baby salad leaves

1 pack of 12 ready cooked quails eggs

1 pack of King Prawns, ready cooked

1 jar of Crayfish tails - in a dill mayonnaise

1 jar of Danish Caviar (or if you are feeling extravagant, you can use Salmon Caviar)

Lemon for garnish (cut into quarters)
Method

Place a handful of salad leaves on each plate.

Divide and arrange the King Prawns on top of the salad leaves.

Spoon the crayfish tails onto each plate.

Place quails eggs on the leaves

Using a teaspoon, spoon mounds of Caviar onto the eggs.

Finally, garnish with lemon quarters and also a tiny sprinkling of chopped fresh herbs if you have any to hand.
